SALMON PATTIES WITH HORSERADISH CAPER SAUCE


Fresh salmon turns into terrifi c salmon burgers. Place between a bun
with lettuce, tomato, and this wonderful Horseradish Caper Sauce.,

Makes 6 patties
1¼ lbs salmon fi llets, skinned
1/3 cup fi nely chopped onion
3 tablespoon light mayonnaise
½ teaspoon dried dill weed leaves
½ cup Italian bread crumbs
Salt and pepper to taste

1. Trim salmon, and cut into 2-inch cubes; place in food processor, or chop fi nely by hand.
2. Add onion, mayonnaise, dill weed leaves, and bread crumbs, mixing well. Season to taste.
3. Coat skillet with nonstick cooking spray, and heat. Shape salmon mixture into 6 patties; brown patties over high heat for 1 minute. Lower heat, and continue cooking for a few minutes; turn over, and continue cooking about 3 more minutes, or until salmon is done. Do not overcook. Serve with Horseradish Caper Sauce.

Horseradish Caper Sauce
¼ cup light mayonnaise
2 tablespoons prepared horseradish
1 tablespoon lemon juice
1 tablespoon fi nely chopped onion
1 teaspoon capers, drained

1. In a small bowl, stir together mayonnaise, horseradish, lemon juice, onion, and capers. Refrigerate until serving.
